Squirrel with Parsley

What you'll need:

  • 3 Squirrels
  • 2 sm Onions, minced
  • 1 cup Mashed potatoes, cold
  • 4 tblsp Parsley, chopped
  • Salt Pepper
  • 4 tblsp Dandelion greens, chopped or water cress
  • 2 tblsp Butter

Step 1 Cook squirrels in salted water for 30 to 45 minutes.

Step 2 Remove meat from bones.

Step 3 Blend together meat, onions, potatoes, and parsley. Season to taste with salt and pepper.

Step 4 Form into balls and roll in dandelion greens or water cress.

Step 5 Fry in hot butter.
